There are two types of fruit ripening.

① A type in which maturation begins with ethylene gas. mature after harvest. (Climateric fruit)
Banana, melon, mango, papaya, kiwi, fig, apple, avocado, tomato, pear, peach, plum, etc.

②It ripens only when it becomes a mother plant. Does not mature after harvest. (non-climatic type fruit)
Oranges, grapefruits, lemons, limes, pineapples, dragon fruit, lychees, paprikas, grapes, cherries, pomegranates, strawberries, raspberries, blueberries, etc.

Regarding ①, pectin is decomposed by the action of pectinase, and fructose and glucose are increased by the action of amylase. Ethylene gas is effective for this, and if you put fruits that generate a lot of gas (bananas, apples, etc.) in a plastic bag with other fruits, they will be ready to eat sooner.
